OSAKA — Tucked into the cityscape near Umeda, Sake House by Julian Houseman offers a deeply personal approach to sake curation. Houseman, an Australian-born sake journalist and educator, brings years of writing and tasting experience into an intimate, softly lit setting where rare bottles take center stage.

“I’m not interested in sake as a checklist,” says Houseman, reflecting his belief in exploring sake for its story, its context, and its emotional resonance. Guests are guided through a rotating list of seasonal jizake — many of which are unpasteurized, limited-release, or locally distributed.

The bar is modest in size but rich in experience, attracting a mix of curious travelers, local artisans, and industry professionals. With a focus on depth rather than variety, each pour becomes a small narrative in itself.

Houseman often pairs sake with minimal, thoughtful side dishes, and is known for his willingness to challenge conventional preferences. “Sometimes I serve a sake warm not because it’s traditional, but because it’s alive that way,” he explains.
