VIENNA — In the heart of the 20th district, Kura Wien is quietly reshaping what it means to brew sake in Central Europe. First opened in 2020, the brewery returned to full operation in late 2025 with a revitalized vision and a new lead brewer: Markus Csenar.
Csenar brings scientific expertise and a deep curiosity to the process. “To me, sake is not just a drink — it’s an ecosystem,” he says. With locally sourced rice from Burgenland and water from the Vienna Woods, Kura Wien merges Japanese techniques with Austrian terroir.
Fermentation is slow, and the resulting sake leans toward a savory, structured profile. Their latest junmai releases have been praised for their food compatibility and clarity — served in elegant Zalto glassware during weekend tastings.
On-site, the brewery offers a contemporary tasting room where visitors can experience pairings that reflect both Japanese and Austrian influences. Think pickled vegetables with umami-rich sake, or trout tartare with a crisp nama.
Kura Wien’s return signals more than a comeback. It’s a confident statement that sake can — and should — be made anywhere there’s respect for balance, patience, and precision.
